How To Cook Chocolate Brownie Without Sugar And Flour - Recipe

Required products :

  • 200 grams of dark chocolate (70% cocoa)
  • 200 grams of cherries - pitted
  • 100 grams of coconut flour
  • 100 grams of dates
  • 50 grams of butter and 50 grams of duck fat (you can use only one type of fat)
  • 4 eggs (separate the whites from the yolks)

for the glaze:

  • 100 grams of dark chocolate
  • 20 grams of butter
  • 30 milliliters of cooking cream

Method of preparation :

Melt the chocolate in a water bath and add the yolks one by one, stirring constantly.

Using a mixer, beat the egg whites to a froth, add a pinch of salt.

Transfer the egg whites to the chocolate mixture and stir with a spatula from the end of the bowl to the center in a spiral motion until the mixtures are completely combined.

Melt the butter and fat in a water bath. Pour them into the blender jar, add the peeled dates and blend. If necessary, add a little water to obtain a homogeneous mixture.

Stir the butter into the chocolate mixture. Add the coconut flour and stir for the last time until it is completely absorbed.

Transfer the dough to a 30 by 20 cm rectangular baking tray lined with parchment paper. Arrange the cherries on the surface of the marsh and bake for 20 minutes at 180 degrees.

Once the brownie has cooled, prepare the chocolate glaze.

Melt the chocolate for it in a water bath and add the butter and cream to it, stirring constantly.

Transfer the brownie to a tray and apply the chocolate coating. Cut into squares.

 

Store in the refrigerator and allow the dessert to warm to room temperature before eating.
