How To Cook Chocolate Cake With Caramelized Hazelnuts - Recipe

Required products :

  • 100 grams of almond flour
  • 200 grams of butter
  • 8 eggs
  • 100 grams of sugar
  • 400 grams of dark chocolate
  • 50 grams of hazelnuts
  • 150 grams of brown sugar

 

For mousse:

  • 200 milliliters of cream
  • 200 grams of dark chocolate
  •  

Method of preparation :

Preheat oven to 170 degrees. Grease with a detachable baking dish with a diameter of 23 cm, then sprinkle with flour.

Melt the butter in a small saucepan, remove from the heat and add the chocolate. Stir until the latter melts. Allow to cool. Separate the egg whites from the yolks. Beat the yolks with the brown sugar until a light fluffy mixture is obtained (about 8-10 minutes). Beat the egg whites until "hard peaks" (4 - 5 minutes).

Pour the almond flour into the chocolate mixture, add the yolks, stir and then carefully add the egg whites.

Pour the dough into the prepared form, bake in the oven for 30 - 35 minutes. The cake will be soft in the middle, but this is normal. Remove from the pan and leave for an hour to cool.

Melt the sugar in a suitable bowl, add the hazelnuts and stir for 2-3 minutes. Then pour them on paper and let cool.

Pour 100 milliliters of cream into a small saucepan, place on the stove and when it boils, remove immediately and add the chocolate. Stir until the chocolate is melted. Whip the remaining cream until fluffy. Add to the chocolate mixture and refrigerate for 30 minutes.

When the marsh cools completely, apply mousse on its surface and sprinkle with caramelized hazelnuts.
