Method of preparation :
Preheat oven to 180 degrees. Spread a 20 cm round cake tin.
Mix the chocolate, liqueur and coffee in a bowl and place in a water bath to melt the chocolate. Cool.
Save 1 tablespoon of sugar, and the rest, along with the yolk, beat with a mixer until a light cream. Add the cooled melted butter, almond flour and combine with the chocolate mixture.
Beat the egg whites until fluffy. Add the separated spoon of sugar to them and beat until stiff peaks. Carefully add the egg whites to the chocolate mixture with the yolk.
Put half of the cherries in the dough and pour into the pan. Bake for 30 minutes, until dry. Cool completely on a wire rack.
Prepare the chocolate glaze: put the chocolate, 2 tablespoons of cherry juice and 2 tablespoons of liqueur in a bowl and melt in a water bath. When the chocolate has melted, add the butter and stir to combine. Remove the bowl from the heat and continue to stir until everything is well combined. Cool.
For the syrup, mix the macaw, the remaining cherry juice and liqueur, the fruit and heat for 2-3 minutes until the syrup thickens. Set aside to cool.
Spread the cooled cake with chocolate cream and pour the syrup when serving.
