Necessary products

For the glaze:

  • 200 grams of dark chocolate
  • 3 tablespoons water
  • 1.5 tablespoons cognac
  • 3 tablespoons low-fat liquid cream
  • 15 grams of butter

For the dough:

  • 200 grams of butter
  • 100 grams of dark chocolate
  • 300 grams of flour
  • 2 teaspoons leavening agent
  • 290 grams of brown sugar
  • 200 grams of sour cream (fat content 20%)
  • 2 eggs


Method of preparation :

Turn the oven to 190 degrees, prepare a form measuring 33 by 24 centimeters (you can use a smaller but not larger dish). Cover the bottom with greased parchment, grease the walls and sprinkle with flour.

The dough

Melt the chocolate and butter in a water bath, stirring constantly.

Sift the flour, add the leavening agent, brown sugar and mix.

Pour the chocolate into the dry mixture, stir and you will get a firm dough. Add the cream, stir again and beat the eggs. Then beat with a mixer and pour the mixture into the prepared form.

Place in the hot oven for about 40-45 minutes, and check the readiness of the cake with a toothpick.

Leave it in the pan for 5 minutes when it is ready, and then take it out on a wire rack, where it is allowed to cool completely.

Meanwhile, make the glaze. Melt the chocolate, add the water and cognac and stir. Then pour the cream, remove the pan from the heat and add the butter. Mix everything.

Cover the cooled cake with this glaze.
