Required products :

  • 200 grams of butter
  • 125 grams of self-swelling flour
  • baking powder
  • 5 tablespoons cocoa powder
  • 2 teaspoons baking powder
  • 5 eggs
  • 200 grams + 3 tablespoons of sugar
  • 2 tablespoons fresh milk
  • 150 grams of dark chocolate (not less than 70% cocoa)
  • 250 grams of pitted cherries
  • 50 milliliters of brandy or cherry liqueur kirsch
  • 1 orange peel
  • 500 milliliters of high-fat confectionery whipping cream
  • vanilla

Method of preparation :

Turn on the oven to preheat to 150 degrees.

Mix the flour with the cocoa and baking powder, beat the egg whites to a froth.

In a separate bowl, mix the butter with the sugar. Add the yolks one by one, the milk and 100 grams of melted chocolate.

Pour the cocoa flour into this mixture, put 1 tablespoon of the protein foam first, and then the rest.

Pour the dough into a form and bake for 50-60 minutes. Wait 5 minutes before removing the marshmallows from the pan. Allow to cool completely.

Set aside a few cherries for decoration, and put the rest in a saucepan, sprinkle with three tablespoons of sugar and pour over the brandy or liqueur. Put on low heat and cook until the fruit softens, but should not lose its shape. Then remove from the heat and allow to cool.

Cut the marshmallows horizontally into two or three parts and syrup each of them with the cherry syrup.

Then arrange them on top of each other, spreading between them the cream, whipped with 50 grams of sugar and vanilla, and drunk cherries.

Also cover the surface of the cake with cream, decorate with the selected fruits and sprinkle with chocolate shavings.

Enjoy!
