How To Cook Chocolate Cake With Nuts Without Flour With Mascarpone Cream And Cognac - Recipe

Required products :

  • 400 grams of dark chocolate
  • 400 grams of mascarpone
  • 6 eggs
  • 180 grams of butter
  • 150 grams of brown sugar
  • 1 orange
  • 50 grams of powdered sugar
  • 50 grams of almonds
  • 50 grams of walnuts
  • a handful of hazelnuts
  • 1 tablespoon liquid honey
  • 1 tablespoon cognac
  • a pinch of cinnamon
  • pinch of sea salt

 

Method of preparation :

Preheat oven to 190 degrees.

Mix in a small saucepan 170 grams of butter, brown sugar and 300 grams of chocolate, broken into small pieces. Melt the products in a water bath.

Grind the almonds and walnuts using a blender (to get fine crumbs).

Separate the egg whites from the yolks.

Beat the egg whites (with an egg whisk) with a pinch of salt until fluffy.

Beat the yolks with a mixer and without stopping the process, add the chocolate mixture and nuts.

Then add the whipped egg whites in portions, stirring vigorously.

Grease a suitable form with oil, pour the resulting dough into it and place in a preheated oven for 25-30 minutes. If necessary, cover with foil and return for another 5 - 7 minutes to bake.

Squeeze the juice from the orange, grate its peel finely.

Make a cream. To do this, mix the grated peel with 2 tablespoons of orange juice, add the mascarpone, cinnamon, powdered sugar, pour the cognac and mix everything thoroughly.

When the chocolate bar has cooled, cut it into two parts to make two thinner ones. Spread one of them with cream and cover with the other.

Melt the remaining chocolate in a water bath and add honey.

Stir and apply the icing on the surface of the cake. Flatten with a wide knife or spatula, sprinkle with crushed hazelnuts.
