Required products :

  • 1 packet of 85 grams of fruit jelly (raspberry)
  • 250 grams of chocolate biscuits
  • 280 grams of sugar
  • 75 grams of melted butter
  • 759 grams of cream cheese at room temperature
  • 4 eggs
  • 250 grams of sour cream
  • 200 grams of dark chocolate, melted and cooled
  • 1/4 tea cup of cocoa powder
  • 1 1/2 teaspoons salt
  • 125 grams of raspberries

Method of preparation :

Prepare the jelly as described on the package, but reduce the amount of water in half (this way the jelly will be firmer). Pour into a small pan and refrigerate for at least 3 hours. If you can't find jelly, use fruit juice and gelatin to make one.

Turn the oven to 175 degrees and line a 23 cm diameter cake tray with paper.

Wrap the outside of the tray with aluminum foil so that you get something like a cup around the mold itself. If you use an ordinary tray, it is not necessary to do so, this is in case the tray has detachable walls.

Grind the biscuits, add 60 grams of sugar, butter and combine.

Pour the mixture into the prepared pan, pressing firmly on the bottom.

Stir in the cream cheese until a creamy mixture is obtained. Add the remaining sugar and stir. You should add the eggs, one at a time, waiting for each to be absorbed by the cream before adding the next. Finally, add the sour cream, cocoa and chocolate, salt.

Pour the cream over the marsh and place the form, wrapped in foil, in another larger pan, in which you pour water (about 3-4 centimeters from the bottom) and bake for 1 hour.

The secret of baked cheesecake is cooling. Therefore, when you turn off the oven, open the door and leave the cake inside to cool for 1 hour.

Remove from the oven and cool completely before removing from the pan.

Cut the jelly into cubes and place them on the cake, decorate with raspberries.
