Necessary products

2 hard pears

For syrup:

1 liter of water
300 grams of sugar
cinnamon, cardamom and anise to taste
100 grams of dark chocolate (75% cocoa)
200 milliliters of liquid cream with a fat content of 20%
2 tablespoons powdered sugar
vanilla pod

Method of preparation :

Peel the pears, leaving the stalks. Remove all irregularities on the fruit, they must be absolutely smooth.
Put them in a saucepan, pour enough water to cover them completely (without the tails). Sprinkle with sugar and add spices. You can also use grated lemon or orange peel, cloves ...
Let the pears cook for 30 minutes.

Whip the chilled cream. Add powdered sugar, vanilla seeds (or a packet of vanilla) to it. Cover the bowl with plastic wrap and refrigerate.

When you boil the pears, take them out of the syrup, cut them in two lengthwise and carefully remove the inside with the seeds, using a spoon. Put the peeled fruit in the refrigerator for 40 minutes or an hour.

Melt the chocolate in a water bath, then distribute it in four suitable molds or cups while still hot. In each bowl put half a syrup pear, which is filled with whipped cream.

 

Incredibly successful combination of hot chocolate, ice pear and cool cream.

Decorate the dessert of your choice and serve.
