Necessary products

For the dough:

  • 125 ml of fresh milk
  • 100 g butter
  • 200 g of flour
  • 5 eggs
  • 1 tsp sugar
  • pinch of salt

For the filling:

  • 200 ml sour cream
  • 2 tsp powdered sugar
  • 1 tsp vanilla sugar

For the glaze:

  • 100 g of melted chocolate in a water bath

Method of preparation:

Mix 125 ml of water with milk, sugar, butter, salt and bring to a boil. Pour all the flour and cook, stirring, until the dough begins to thicken. Pour it into a bowl and add the eggs one by one, stirring constantly. Preheat oven to 220 degrees.

Pour the dough into a pastry syringe and form walnut-sized balls in a tray lined with baking paper. Put in the oven for 15-20 minutes, then leave for an hour to cool.

Beat the cream with the powdered sugar and vanilla. Cut the balls in half horizontally and fill them with whipped cream. Put the eclairs in the refrigerator. Dip each one in melted chocolate before serving.
