Required products :

  • 300 grams of fruit puree (fruit of your choice)
  • 300 grams of sugar
  • 60 grams of glucose syrup
  • 8 grams of pectin
  • 2 teaspoons lemon juice

For the chocolate glaze (Ganash cream):

  • 80 grams of fruit puree
  • 140 grams of dark chocolate
  • 100 grams of milk chocolate
  • 40 grams of butter

 

Method of preparation :

Mix pectin with 2 tablespoons of sugar, add the fruit puree and heat.

Then pour the glucose into the mixture, pour the remaining sugar and let the combination boil, stirring. Once heated to 108 degrees, pour the lemon juice. Pour into a mold and leave for a day.

Make the chocolate cream by melting the two types of chocolate together and mixing them with the warm fruit puree. Add the butter and beat with a blender.

Pour over the fruit base and once the coating is firm, cut into candies.
