Required products :

  • 200 grams of chocolate biscuits
  • 150 grams of milk chocolate
  • a pinch of cinnamon
  • 300 ml high-fat liquid cream (36%)
  • 1 tablespoon honey (liquid)

For cream:

  • 280 grams of chocolate 70% cocoa
  • 140 milliliters of low-fat liquid cream

Method of preparation :

Melt the milk chocolate in a water bath. Whip the cream to a froth that is not too fluffy. Using a spatula, gradually add it to the chocolate and add a pinch of cinnamon.

Put the mousse in the refrigerator.

Make a cream. Bring the cream to a boil and then put the broken dark chocolate in it. Remove the pan from the heat and stir until the pieces melt. Then divide the mixture into 2 equal parts and add honey to one. Allow to cool.

Arrange the biscuits on a plate, giving the shape of a rectangle measuring 10 x 3 centimeters. On this base, apply a layer of ganasha without honey, and spread mousse on top. Refrigerate for 6 hours.

Before serving, warm the cream with honey in a water bath and pour the mousse with it.

Serve dessert with orange sorbet.
