Method of preparation :
Mix the flour, sugar, baking soda, salt, baking powder and cocoa. Using a hand mixer, beat the eggs and vanilla and pour over the dry ingredients. Add the cream and bake the finished mixture in muffin tins for 20-25 minutes at 170 degrees. Cool the cupcakes completely before continuing.
Prepare the glaze - put 1 1/2 teaspoons of sugar, cream tartar and water in the pan. Bring to a boil and reduce the temperature, let it boil for 4 minutes.
Beat the egg whites until soft peaks, then reduce the speed of the mixer and add the remaining sugar crystals. When combined, add the sugar syrup in a thin stream. Beat for about 5-8 minutes on high speed, then allow the cream to cool.
Flatten the cupcakes by cutting off the bulging lids and making a hole in the middle with a spoon. Fill it with 2 pitted cherries and put a small ball of ice cream on top. Put in the freezer for 20-25 minutes.
When the ice cream is firm, cover it with icing in a spiral motion and with the help of a pouch. Burn it with a burner until it turns brown and serve immediately.
