Mix in the egg and the second yolk, sugar and beat, placing the dish in a water bath.
When a fluffy mass is obtained, pour the ground cinnamon into it, pour in the rum and cool, stirring in the meantime.
Break the dark chocolate into pieces, melt them in a water bath and add to the eggs. Stir and allow the cream to cool.
Meanwhile, whip the cream. Combine it with the other products and distribute in suitable molds (maybe in dessert bowls or cups), which you store in the freezer or refrigerator for at least 7 hours.
When you take them out, immerse them in boiling water for a few seconds so that the parfait can be easily separated from the dishes. If you have used glass cups or bowls, serve the dessert directly in them.
Decoration is a matter of choice. In this case it is fruity.
