Mix the yolks with the sugar, add the lemon juice and the flour mixed with the nuts, then the grated chocolate and finally the whipped egg whites. Carefully mix everything and with the help of a pastry syringe make small molds in a tray lined with greased baking paper. Sprinkle the cakes with granulated sugar and place in the oven at medium heat for about 15 - 20 minutes. Allow the petit fours to cool and glue them two by two with a mixture of melted chocolate, butter and vanilla in a steam bath. You can pour melted chocolate on top if you wish.
