Necessary products

For the dough:
8 proteins
180 grams of sugar
100 grams of dark chocolate
60 grams of flour

For the cream:
100 grams of sugar
30 grams of starch
2 egg yolks
380 milliliters of milk
250 grams of softened butter
2 grams of vanilla sugar

For sprinkling and spreading:
2 tablespoons strawberry jam
1 teaspoon cocoa powder
2 teaspoons powdered sugar

Preparation :
Melt the chocolate in a water bath and leave to cool, during which time start making the cream.
Mix half of the sugar with the starch in a bowl, add the vanilla sugar and stir.
Then add the yolks and a few tablespoons of milk, stir.
Then pour half of the remaining milk and mix well again.
Pour the remaining amount into a suitable container, add the sugar and place on the stove. Bring to a boil over low heat, stirring constantly.
Add the dissolved starch, pouring it in a thin stream, do not stop stirring until the consistency thickens.
Remove the cream from the heat, cover the dish with plastic wrap to touch the cream. Allow to cool completely.

Beat the egg whites with a wire whisk until you get a thick foam.
Without stopping the process, gradually add the sugar and beat until completely dissolved.

Beat the butter until you get a fluffy mass, gradually add the cooled cream to it and beat until the mixture becomes fluffy (the butter and cream should be at the same temperature).

Unroll the roll and remove the paper. Spread it with jam or use another jam. Apply a layer of cream and roll a roll, which is stored in the refrigerator overnight.
