Learn how to cook "Chocolate roll with mascarpone cream and lemon". Delicious recipe.
Required products :
250 grams of mascarpone
200 grams of chocolate
120 milliliters of liquid cream
80 grams of flour
75 grams of butter
50 grams of powdered sugar
3 eggs + 2 egg yolks
6 tablespoons sugar
2 tablespoons cocoa
1 lemon a
pinch of salt
Method of preparation :
Mix the flour with the cocoa and a pinch of salt in a bowl. Separately beat the eggs together with the yolks and 1/2 tablespoon of sugar until white foam is obtained.
Sift the dry ingredients directly into the bowl of the beaten eggs, pour in the melted butter and mix gently until smooth.
Pour the dough into a pan lined with parchment and greased with oil.
Bake the marshmallows for 6-10 minutes at 180 degrees. When ready, turn it over on a thin cloth sprinkled with cocoa and remove the paper.
Quickly roll up a roll and leave to cool.
Meanwhile, beat the mascarpone with 50 grams of powdered sugar, cream and grated lemon zest.
When the marsh cools, unroll it and syrup it with a sweet liquid made from 1 tablespoon of sugar and 1/3 teaspoon of water. Then spread the cream and roll again.
Put the dessert in the refrigerator for 30 minutes. Once removed, cover generously with melted chocolate.
You can decorate the roll with ready-made chocolate figurines or of your choice.
