for the cake

 

  • 220 grams of flour
  • 90 grams of unsweetened cocoa
  • 12 grams of baking powder
  • 5 grams of salt
  • 2 eggs
  • 400 grams of sugar
  • 110 grams
  • 1 cup buttermilk
  • 10 grams of vanilla
  • 240 milliliters of hot coffee

 

for the chocolate mousse

 

  • 460 grams of dark chocolate
  • 300 grams of whipping cream
  • 16 grams of cocoa
  • 10 grams of gelatin
  • 60 grams of cold water
  • 500 grams of whipping cream with 35% fat

 

Method of preparation:

 

Preheat oven to 180 degrees. Grease and knead a cake tin with a diameter of 23 centimeters. In a bowl, mix the flour, baking powder, cocoa and salt. In another bowl, pour the sugar, eggs, butter and stir until the products are homogenized.

Combine the buttermilk with the vanilla, along with the coffee and the other wet ingredients add to the dry ones. Make a dough and pour into the form. Bake for 30-35 minutes, check with a dry stick if the tops are ready. Cool, cut into two pieces and set aside. Dissolve the gelatin in water and melt the chocolate in a saucepan.

Pour the cream, add the cocoa and stir. After warming the mixture, pour the gelatin and remove from the heat. Whip the cream and combine it with the chocolate mixture. Put the first sheet on a tray, glaze evenly with the resulting cream and add the second half.

Spread in the same way on all sides, and with the rest of the cream fill a kitchen bag. Cool for 30 minutes, remove the cake and with rotating movements of the syringe form roses on the surface. Return the cake to a cool place and after an hour cut it, serve it and enjoy its rich taste!
