In a deep bowl, mix the semolina, crystal and vanilla sugar. Pour the water, stir and leave at room temperature for 2-3 hours. During this time, the semolina will swell.
Then add the oil to the mixture and mix with a wire whisk. Pour the sifted cocoa into the homogeneous combination and stir so that no lumps remain.
In a separate bowl, mix the flour with the baking powder and sift together. Pour them into the dough and mix again.
If it turns out too liquid, add a little more flour, not forgetting to stir.
The consistency should be thick enough. Add the dried / candied fruit, mix well with the dough and pour it into a greased pan.
Bake the cake at 180 degrees for about an hour. Once cooled, sprinkle with powdered sugar and serve.
