Required products :

  • 2 eggs
  • 50 grams of sugar + 2 tablespoons to sprinkle
  • 15 grams of flour
  • 15 grams of cornstarch
  • 150 grams of dark chocolate
  • 75 grams of butter
  • 250 milliliters of skim milk
  • peel of 1 orange - grated
  • cocoa

Method of preparation :

Grease small souffle bowls with oil and sprinkle with a little sugar.

Separate the egg whites from the egg yolks. Add 50 grams of sugar to the yolks and beat until a creamy mixture is obtained. Add the flour and starch and combine.

Break the chocolate into a bowl and place on a saucepan with boiling water. Once the chocolate is melted, add the butter and stir to combine. Set aside.

Bring the milk to a boil, then remove from the heat and carefully pour over the yolks in a thin stream, stirring constantly. Then return to the stove and cook on medium heat until the cream begins to thicken. Remove from the heat and add the chocolate mixture. Add the orange peels and leave the mixture to cool.

Beat the egg whites until soft peaks and carefully and in portions add to the other products, stirring with a spatula.

Distribute the mixture between the prepared bowls, filling them to the top. Bake for 11-12 minutes in a hot oven at 190 degrees. Sprinkle with cocoa and serve the souffle warm.
