In a saucepan heated to medium heat put water, butter, 2 tablespoons sugar and bring to a boil. Reduce heat and add flour. Stir constantly with a wooden spatula until a small ball is obtained - about 1 minute.
Remove from the heat and allow the dough to cool for 5 minutes, then add the eggs one by one, stirring with a spatula until completely absorbed.
Finally add the vanilla and stir for the last time.
Fill a bag with a suitable nozzle with the dough.
Line a baking tray with parchment paper.
Form small circles with a diameter of about 3 centimeters and place a candy on top, wrap in spiral movements with the dough to cover the chocolate. Put in the freezer and freeze for 1 hour.
Heat a large amount of oil to 180 degrees in a deep saucepan.
Fry 3-4 loaves at a time until they turn brown - about 3 minutes.
Remove them on a wire rack or kitchen paper to remove excess oil from them.
Roll them in a mix of 1/2 teaspoon sugar and 2 tablespoons cinnamon.
