Required products :

  • 60 milliliters of tonic
  • 140 milliliters of high-fat whipped cream
  • 25 grams of butter
  • 150 grams of dark chocolate, crushed
  • 30 milliliters of gin
  • 200 grams of white chocolate, crushed
  • 1 large lemon, finely grated
  • 2 limes, finely grated

Method of preparation :

Cover a tray with parchment paper.

Boil the tonic until the liquid is reduced by half, then cool.

Heat the cream and butter until melted. Pour the hot cream over the chocolate and mix gently with the cream mixture until smooth. Add gin and tonic and stir. Cool for 10 minutes in the refrigerator or until the mixture hardens. Form 12 candies, put them in the pan and freeze for 30 minutes.

Melt the white chocolate in a water bath. Add the lemon zest and 1 lime and stir. Once the mixture has cooled slightly, roll the candies in this glaze with a fork and arrange them in the pan. Garnish with grated rinds of 1 lime. Refrigerate for 10-15 minutes and serve.
