How To Cook Chocolate Vegan Cake With Soy Milk And Icing - Recipe

Required products :

  • 200 grams of self-swelling flour
  • 100 grams of brown sugar
  • 100 grams of white sugar
  • 50 grams of cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 120 grams of margarine
  • 2 tablespoons white or apple cider vinegar
  • 1 teaspoon vanilla extract
  • 150 milliliters of soy milk (or other optional)
  • raspberries, strawberries, blueberries for serving (optional)

for the glaze:

  • 300 grams of powdered sugar
  • 150 grams of margarine
  • 2 tablespoons glucose syrup
  • 1 teaspoon boiling water

Method of preparation :

Preheat oven to 150 degrees and line a 22 cm diameter baking tray with parchment paper.

In a bowl, combine all dry products - flour, sugar, baking powder, salt.

Make 3 holes in the mixture - 1 large, 1 medium and 1 small. Put the melted margarine in the large one (if you don't want the cake to be vegan, you can use butter), in the middle vinegar, and in the smallest one the vanilla. Drizzle with soy milk and stir.

Pour the mixture into the prepared pan and bake for 18-20 minutes, until dry. Cool completely before removing from the pan (if you hurry, you risk the cake breaking!)

For the glaze with a mixer, beat the powdered sugar with margarine, syrup and water.

Spread the resulting cream on the cake and decorate with fruit of your choice.
