Required products :

  • 200 grams of Brazil nuts
  • 150 grams of macadamia nuts
  • 250 grams of pitted dates
  • 100 grams mix of raisins and dried fruit peels
  • peel of 1 lemon, finely grated
  • 2/3 tea cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 150 grams of powdered sugar
  • 3 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons brandy

About the topping :

  • 110 grams of apricot jam
  • 200 grams of a mix of candied fruits / apricots, cherries, pears, etc./

Method of preparation :

  • Preheat the oven to 150 degrees and cover with baking paper the bottom and walls of a 20-centimeter form.
  • Mix the nuts, dried fruits and fruit peels in a large bowl.
  • Sift the flour, baking powder and salt on them.
  • Add the sugar, eggs and vanilla extract and stir with a wooden spoon.
  • Pour the mixture into the prepared form and level the surface.
  • Bake for 1 1/2 hours or until a toothpick comes out clean from the center of the cake.
  • Allow to cool for 15-20 minutes and carefully transfer it to a plate of suitable size. Remove the baking paper.
  • Punch the entire surface with a toothpick, sprinkle with brandy and wrap tightly with foil.
  • Leave the cake in a cool, dry place for about 2-3 hours.
  • Heat the apricot jam and spread it on top and on the sides.
  • Garnish with candied fruit, cut and serve.
