Required products :
100 grams of dark raisins
100 grams of light raisins
50 milliliters of rum
80 grams of fresh yeast
250 milliliters of milk
1 kilogram of flour
400 grams of sugar
peel of 1 lemon
peel of 1 orange
1 teaspoon salt (without top)
2 pinches of cardamom
500 grams of butter
200 grams of candied fruit
300 grams walnuts
vanilla, cinnamon, nutmeg to taste
powdered sugar to sprinkle
Method of preparation :
Wash the raisins, pour rum over them and leave them overnight. Crush the walnuts in a mortar, grind the candied fruits if they are large, grate the citrus peels.
Dissolve the yeast in 125 milliliters of warm milk, add 5 tablespoons of flour and 2 tablespoons of sugar. Leave the mixture in a warm place to rise.
In a large bowl, sift 2/3 of the flour and make a depression in the middle. At the end, distribute the lemon and orange peel, salt, cardamom, 150 grams of sugar and 450 grams of butter (melted).
Put the yeast mixture in the cavity and quickly knead the dough and leave it to rise. Once this is done, add the remaining dough, candied fruit, walnuts and raisins (pre-drain the rum from the latter).
Add vanilla and cinnamon to taste, stir and let rise again.
Then divide the dough into 2 parts. Leave one thick and shape the other with your hands, folding so that it becomes twice as thick as the first. Roll this layer to the first and place the two parts in a suitable oiled form.
Bake the cake for 50-60 minutes at 160-180 degrees and spread it generously with the remaining oil. Once cool enough, sprinkle with powdered sugar.
Wrap it in foil and store in a cool place to ripen. So you can leave a month.
