If meat is not on your menu, it does not mean that there should not be delicious and beautiful dishes on your holiday table. Even if you are not a vegetarian, but just want to cut the meat at Christmas dinner, you can take advantage of the following recipe.

Required products :

  • 250 grams of spinach
  • 250 grams of mermaid (or tofu)
  • 2 tablespoons olive oil
  • 50 grams of cedar nuts - baked
  • grated nutmeg
  • 2 cloves garlic
  • peels of two lemons
  • 1 small bunch of dill
  • 1 tablespoon cherry jam
  • flour for shaping the gums
  • 500 grams of puff pastry
  • 1 tablespoon almond milk (you can use cow's milk)

Method of preparation :

Put the spinach in a colander and pour boiling water over it, wait for it to soften. Then squeeze it and dry it with kitchen paper. Cut it into small pieces and put it in a large bowl. Add the cheese (tofu), pine nuts, grate a little nutmeg, crush two cloves of garlic. Grate the zest of the lemons and finely chop 1/3 of the dill and also add to the other products, along with 2 tablespoons of dried cherries. Mix all ingredients well until a homogeneous mixture is obtained.

Sprinkle the kitchen counter with flour and spread the dough on it. Roll out thinly, keeping its rectangular shape. Put the filling across the width of the dough, keeping 2 cm of the edges clean. Roll up and form a wreath. Line a baking tray with parchment paper and transfer the gum to it. Refrigerate for 20 minutes.

Preheat the oven to 180 degrees with the fan on. Before you put the roll to bake, grease it with a little almond oil and make incisions in it. Bake for 45 minutes, leave to cool on a wire rack for 5-10 minutes and garnish with the remaining twigs of dill and dried blueberries.
