Required products :

  • 12 small red potatoes
  • 2 tablespoons olive oil
  • 1/2 cup low-fat sour cream
  • 2 tablespoons chives
  • 2 tablespoons butter - melted
  • 2 tablespoons capers
  • 1 1/2 teaspoons lemon juice
  • 1/2 teaspoon black pepper
  • 2 tablespoons Parmesan cheese

Method of preparation :

Halve the potatoes, put in a bowl, pour olive oil over them.

Arrange the potatoes face down in a tray (lined with paper). Bake for 20 minutes at 200 degrees in a preheated oven, then turn the potatoes over and bake for 10 minutes. Leave the finished potatoes to cool for 20 minutes.

With a thin knife, carefully cut a small circle in the center of each potato - on the cut side. With a small spoon, remove the inside of the potatoes so that a thin shell is obtained.

Mix the inside of the potatoes with the cream, 1 tablespoon of chives, butter, capers, lemon juice, pepper and parmesan.

Fill the potatoes with the resulting mixture and sprinkle with the remaining 1 tablespoon of chives.

Bake for 2 minutes on high heat to melt the cheese.
