Method of preparation:
Finely grind the almonds in a blender and set aside. In a bowl, beat the butter, add the egg and beat. Add the almonds, sugar, flour, lemon juice and salt. Stir with a spatula to mix all ingredients well.
Place the dough on a floured surface and knead it. Cover with cling film and refrigerate for 3-4 hours. It is best done in the evening. Cut the dough into pieces, roll out and cut into circles with a cup.
Choose a ring as wide as the circumference of a whole slice of lemon and use it to remove the inside of the already cut circle. Do the same in the rest. Arrange them on baking paper lined in a pan and spread with beaten egg yolk.
Garnish each biscuit with a slice of lemon and sprinkle with sugar. Preheat oven to 180 degrees and bake for 15-20 minutes. Cool, arrange the biscuits, serve and enjoy!
