Required products :

3 liters of water

2 large potatoes

1/2 cabbage

1/2 head of beets

0.5 teaspoon boiling water

sour cream

1 teaspoon vinegar

Bay leaf

garlic

For the harness:

1 onion

1 carrot

1/2 head of beets

vegetable oil

2 ripe tomatoes

Method of preparation :

Bring the water to a boil, then add the diced potatoes and 1/2 chopped cabbage. While the vegetable broth is cooking, make the stir-fry. Finely chop the onions, grate the carrots and stew them in vegetable oil. When the onion turns red, pour the grated beets (1/2 head). Cut the other half of the beets and put in a deep bowl, pour 1/2 teaspoon of hot water and add 1 teaspoon of table vinegar. Gradually the water will turn a deep red color and when you prepare the borscht, you will use it to color the soup.

Once the vegetables are soft, add the tomatoes that you have previously peeled and grated. Add salt and pepper to taste, stew everything for 7 - 10 minutes.

During this time, the vegetables you put to cook should be ready. Using a slotted spoon, remove the foam formed on the surface of the broth, add salt, bay leaf and stewed vegetables. Let everything simmer for about 10-15 minutes and at the end of cooking add beet juice and a few cloves of crushed garlic. Wait 10 minutes, mix well and before serving, add the cream.
