Required products :

For the cake :

  • 2 1/2 teaspoons buckwheat flour
  • 1/4 cup ground almonds
  • 2 tablespoons chia seeds
  • 1/3 tea cup raisins
  • 2 slices pineapple
  • 1 1/4 tea cups almond milk
  • 2/3 tea cup of maple syrup
  • 3 carrots
  • coconut oil for lubrication

For the glaze :

  • 3 large bananas, peeled
  • 10 pitted dates
  • 2 tablespoons almond oil
  • 1 tablespoon coconut oil
  • 1 teaspoon cinnamon powder
  • 4 tablespoons water

Method of preparation :

  • In a deep bowl, combine the buckwheat flour, ground almonds, chia seeds and raisins.
  • Blend the pineapple, almond milk and maple syrup in a blender and add them to the dry ingredients.
  • Peel and grate the carrots. Add them to the dough and mix well to distribute evenly.
  • Grease two round trays with a diameter of about 23 cm with coconut oil and divide the mixture evenly.
  • Bake in a preheated oven at 150 degrees until golden brown. If you feel that the top side is turning brown too quickly, cover the tray with foil.
  • Allow the cake trays to cool on a wire rack for about 10 minutes.
  • Meanwhile, make the glaze by mixing the ingredients in a blender and blending until a smooth creamy mixture is obtained.
  • Transfer one tray to a plate of suitable size, apply 1/2 of the glaze, cover with the second tray and distribute the remaining glaze.
  • Serve with a smile!
