Required products :

  • 225 grams of self-swelling flour + more flour
  • pinch of salt
  • a pinch of hot pepper
  • 1 teaspoon baking powder
  • 55 grams of chilled butter, cut into cubes
  • 120 grams of ripe cheddar cheese, grated
  • 90-100 milliliters of milk + 1 tbsp

Method of preparation :

Preheat the oven to 200 degrees and place a large baking tray inside.

Sift the flour, salt, pepper and baking powder twice into a bowl and mix with the butter. Knead with your hands so as to obtain fine crumbs. Add 100 grams of cheddar cheese and stir until well combined.

* Do not stir for too long, as the heat from your hands may begin to melt the butter.

Make a well in the center of the mixture. Kneading with your fingers, gradually pour enough fresh milk to make a soft dough.

* You may not need the whole amount of fresh milk to get the right consistency.

Flour a kitchen surface and roll out the dough to a thickness of approximately 2 centimeters. Cut round pieces and arrange them on a sheet of baking paper. Spread them with fresh milk and sprinkle with the remaining cheddar cheese.

Put the baking paper in a preheated pan and bake for 15-20 minutes or until golden brown. Remove the cheese conson from the oven, cool for 10 minutes and serve.
