Required products :

  • 1 kg of potatoes
  • 1 1/2 teaspoons flour + more for shaping
  • 1 teaspoon salt
  • 1 large egg, beaten

Method of preparation :

Boil the potatoes in salted water for 30-35 minutes until soft.

Strain them and cool them so you can safely hold them in your hand. Peel them and cut the larger ones and leave them at room temperature for 20 minutes.

Sprinkle a plate with flour. In a bowl, combine the flour and salt, add the egg and potatoes and knead the dough. It should be very soft and gather on one ball.

Knead it on a floured surface, adding a little flour if necessary. Cover it with a clean towel.

Tear off a piece of dough and spread it on a well-floured surface with the palms of a long wick.

Cut into small pieces about 1 centimeter. Repeat until you have finished the whole amount of dough. Place the gnocchi on a well floured surface.

If you intend to cook them within 2-3 hours, they can stand on the counter, and for longer storage you can defrost them by first arranging them in a tray, after they become hard you can collect them in a zippered bag. and store them for up to 2 months in the freezer. Then cook them, as frozen, put them in boiling water.
