In a saucepan, heat olive oil and fry onions, celery and pancetta for 6-7 minutes. Add the garlic and stir, let it smell slightly and pour the broth. Add 500 milliliters of water, lentils, tomatoes and wait for the liquid to boil. Reduce heat, simmer soup for 5 minutes.
Remove from the heat and add the spinach, the heat will melt the leaves.
Season with sea salt and freshly ground black pepper. Divide the soup into bowls and put a little of the Parmesan flakes in each portion.
You can also serve it with ground hot pepper, if you like the more spicy taste, or add lemon to each portion.
