Required products :

for marshes:

  • 1 cup soft butter, plus more for spreading
  • 2 1/2 teaspoons flour
  • 2 teaspoons sugar
  • 5 large eggs
  • 1 teaspoon almond and vanilla extract
  • 1 teaspoon baking powder and salt
  • 1 cup buttermilk
  • 1/2 cup grated coconut

for cream:

  • 225 grams of cream cheese
  • 1/2 cup soft butter
  • 3 tablespoons coconut milk
  • 3 teaspoons powdered sugar
  • 1 1/2 teaspoons grated coconut 

Method of preparation :

Line 2 trays with a diameter of 16 cm with baking paper and grease the walls and bottom with oil, sprinkle with flour.

Beat the butter with the sugar until fluffy. Add the eggs to them one by one, mixing well with the mixer after each one. Add the fragrances and combine the products again.

In another bowl, sift the flour along with the baking soda and salt. Turn the mixer on low and add the flour to 3 parts and the buttermilk to 3 parts, alternating them. Once the ingredients are combined, add the coconut and stir for the last time with a spatula.

Distribute the mixture in the two prepared pans and bake for about 50 minutes until dry. Remove the trays on a wire rack to cool before proceeding.

For the cream, beat the cheese, butter and coconut milk with a cream mixer. Add the powdered sugar and stir until a creamy mixture, add 1/2 tea cup of grated coconut.

Glue the two marshmallows with a piece of cream and spread the cake on the outside.

Cover the whole cake with the grated coconut.
