Required products :

for the dough:

  • 1/2 teaspoon soft butter
  • 1 teaspoon crystal sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla (extract)
  • 2 1/4 tea cups flour
  • 220 grams of sour cream

For the coconut sprinkle:

  • 1 teaspoon flour
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup cold butter
  • 3/4 tea cup chocolate drops (or finely chopped dark chocolate)
  • 1/2 cup grated fresh coconut
  • 1/2 cup chopped pecans

Method of preparation :

Grease a cake tin with the fat of your choice and flour it.

Using an electric mixer, beat the butter for 30 seconds and add the sugar, baking powder, baking soda and salt. Mix the products and add the eggs one by one, stirring well after each one. Finally, add the vanilla, flour and cream and mix again until smooth.

Prepare the topping - mix the flour with the butter and rub it between your fingers to make crumbs. Add the brown sugar and mix well. Then add the coconut, cinnamon, coconut and nut. Stir well.

Assemble the cake - put half of the coconut and pecan mixture on the bottom of the cake pan. Spread half of the dough on top, sprinkle with the remaining nut mixture and cover with the remaining dough.

Bake in a preheated oven at 180 degrees for 55-65 minutes, until dry. Allow to cool for 10 minutes, then remove from the pan. Once completely cooled, sprinkle with a mix of powdered sugar and cocoa, if desired.
