Necessary products:

  • eggs - 3 pcs.
  • wholemeal flour - 2 tsp.
  • butter - 3/4 tsp.
  • fresh milk - 1/2 tsp.
  • granulated sugar - 1.5 tsp.
  • walnuts - 1/2 tsp.
  • cinnamon - 2 tsp.
  • coconut shavings - 1 tsp.
  • grated carrots - 2 tsp.
  • pineapple - 1 tsp.
  • baking powder - 2.5 tsp.
  • nutmeg - 1/4 tsp.
  • For cream:
  • cream cheese - 225 grams
  • butter - 1/4 tsp.
  • vanilla - 1 tsp.
  • powdered sugar - 4 tsp.

Method of preparation:

Preheat oven to 175 degrees. Grease two cake tins with butter and cover them with baking paper. Grind the pineapple using a blender (about 1 cup ground). Mix the flour with the baking powder, nutmeg and cinnamon. Beat the butter and sugar with a mixer in a large bowl on medium speed, add the eggs, beating after each. Then add the flour, alternating with the milk, without stopping the beating. Mix the carrots, pineapple, coconut and walnuts with the dough. A homogeneous mass should be formed, which should be evenly distributed in both forms. Bake for about 35-40 minutes (or until done). Let cool for 10-15 minutes and remove from the pan. Allow to cool completely.

Beat the cream cheese, butter and vanilla until smooth. Then gradually add the powdered sugar, stir again. Put the cream in the refrigerator for 20 minutes before using it as intended. After removing from the refrigerator, glue the two loaves with it and spread the whole cake on top and sides.
