Required products :

  • 2 teaspoons low-fat cream (500 ml)
  • 1 teaspoon sugar + more to sprinkle
  • 200 milliliters of coconut cream
  • 400 milliliters of coconut milk
  • 12 egg yolks

Method of preparation :

Place refractory baking bowls in a deep pan lined with baking paper.

Combine the cream, sugar, coconut cream and half of the coconut milk in a saucepan and place on the hob to simmer.

Meanwhile, beat the yolks with the remaining coconut milk. Carefully pour the hot coconut mixture over the eggs, stirring constantly.

Distribute between all prepared bowls.

In the pan pour hot water to the middle of the dish and put a sheet of foil on top. Bake for 50 minutes, then pour the water out of the pan and allow the cream to cool for 30 minutes, then refrigerate for 2 hours or overnight.

Sprinkle with sugar and caramelize with a burner just before serving.
