Required products :

  • 800 grams of whole coconut milk
  • 1/4 tea cup of honey
  • 3 teaspoons vanilla extract
  • 1 lemon, peeled and squeezed
  • 2 1/2 tablespoons tapioca starch
  • 1/2 cup roasted coconut shavings

Method of preparation :

  • In a saucepan, mix all the ingredients except the coconut shavings and heat them over medium heat.
  • Stir and when the honey is dissolved, remove from the heat.
  • Wait for the mixture to cool completely, add the toasted coconut shavings and stir again.
  • Pour into a suitable container and place in the freezer until firm.
  • Allow the lemon ice cream to stand at room temperature for about 20 minutes before distributing it in bowls.
  • Sprinkle with toasted coconut and serve.
