Preparation:
Pour the water into a shallow bowl and add the gelatin. Leave it for about 2 minutes until it swells.
In a small saucepan, heat the coconut milk, cream, sugar, and a pinch of salt. The mixture should be hot but not boiling.
Add gelatin and stir until completely dissolved. Distribute the mixture in 8 greased panna cotta molds, Arrange them in a pan and cover with foil.
Refrigerate for a minimum of 4 hours.
Meanwhile, caramelize the peanuts by heating the sugar with 3-4 tablespoons of cold water in a pan over medium heat.
Do not stir, just tilt from time to time for about 5-10 minutes until the sugar is evenly browned.
Add the peanuts and stir vigorously. Allow them to cool completely.
Before turning the dessert into a plate of suitable size, run a sharp knife along the walls of the form.
Sprinkle with caramelized peanuts and serve.
