Required products :

  • 1 teaspoon arborio rice
  • 2 teaspoons fresh milk
  • 400 milliliters of coconut milk
  • 1/2 teaspoon sugar
  • 1 pod of vanilla, cut in half
  • coconut cream to serve (optional)

 

For caramelized bananas:

  • 1/2 teaspoon sugar
  • 60 grams of butter, cut into cubes
  • 2 ripe bananas, peeled and cut into circles
  • 2 tablespoons dark rum

 

Method of preparation :

Pour the rice into a colander and place under running water, rinsing until the liquid is clear.

Then transfer the beans to a saucepan and pour the two types of milk, add the sugar and the vanilla pod cut in half. Place the pan on a medium heat and stir the mixture until it boils. Then reduce the temperature and let the rice simmer on low heat for 30-35 minutes (the grains should soften and the consistency should resemble cream). Stir the porridge periodically so that it does not burn.

Pour the caramel sugar into a non-stick pan and put on medium heat. When the crystals melt and acquire the characteristic hue, add the oil and stir. Then arrange a row of banana rings, which you fry for 1-2 minutes, turn on the other side and after a minute pour the rum into the pan. Stir gently so that all the pieces of fruit are soaked with the aromatic alcohol.

Divide the rice porridge into bowls or plates, put the caramelized bananas and pour the coconut cream.
