Grease a cake pan with detachable walls and stick a sheet of parchment paper on the bottom.
Grind the homemade biscuits to make crumbs. Add the butter and make a few pulsations to combine. Pour into the prepared pan and press well to form a loaf.
Soak the gelatin for 5 minutes in cold water.
Meanwhile, heat the coconut cream, half the honey and a pinch of salt until boiling. Squeeze the water from the gelatin and put it in the hot mixture and stir to dissolve. Pour the coconut mixture into a cold bowl and leave for 1 hour to cool. Pour the yogurt over the coconut and stir. Pour the mixture over the marsh and cool for 2 hours until firm.
Meanwhile, prepare the honey sauce with passion fruit. Take 180 grams of honey put in a saucepan and bring to a boil. Cook for 4 minutes and add the passion fruit seeds along with the orange juice. Boil for 10 minutes until the sauce thickens. Cool for 2 hours.
Remove the cake from the pan and place in a suitable serving tray. Drizzle with passion fruit honey glaze and serve.
