Necessary products:

  • 400 grams of potatoes
  • 600 milliliters of water
  • 450 grams of cod (preferably a whole piece)
  • 1 head old onion
  • 300 milliliters of fresh milk
  • 280 milliliters of skim cream
  • 2 tablespoons green onions (finely chopped)

Method of preparation:

Peel the potatoes and cut them into equal pieces, pour cold water over them and bring to the boil. Cook for 20 minutes. Then drain the water (but do not throw it away) and mash them. Put the piece of fish and the old onion in the "potato broth", after everything has boiled, reduce the heat and let it cook for 5 minutes. Turn the fish on the other side, cook for another 2 minutes (its skin should begin to separate from the soft part), remove to a plate and cut into several pieces. Put the skin and bones of the fish in the broth and cook for 10 minutes, then strain the broth and cool.

Pour the milk and cream into a clean saucepan, bring to a boil and add the mashed potatoes. Mix thoroughly until a homogeneous mixture is obtained. Combine the broth, puree and pieces of fish, cook the soup for 3 minutes. If it is very thick, pour more milk. Finally, add the finely chopped green onions.
