Required products :
- 2 avocados, peeled and pitted
- 2 1/2 teaspoons vegetable broth
- 2 cloves garlic, coarsely chopped
- 1 jalapeno pepper, coarsely chopped
- 1/4 tea cup red onion, chopped
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon hot red pepper
For garnish :
- Cherry tomatoes
- fresh parsley leaves
Method of preparation :
- Puree the avocado, garlic, onion, pepper, lemon juice and parsley in a blender, along with 1 cup of vegetable broth.
- Add the remaining broth and season with salt, pepper and cayenne pepper. Puree until smooth.
- Cool the avocado cream soup for at least 1 hour.
- Divide into bowls and garnish with cherry tomatoes and fresh parsley leaves.
- Serve the soup with toast and sour cream.
