How To Cook Cold Avocado Cream Soup With Lemon Juice And Parsley - Recipe

Required products :

  • 2 avocados, peeled and pitted
  • 2 1/2 teaspoons vegetable broth
  • 2 cloves garlic, coarsely chopped
  • 1 jalapeno pepper, coarsely chopped
  • 1/4 tea cup red onion, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon hot red pepper

For garnish :

  • Cherry tomatoes
  • fresh parsley leaves

Method of preparation :

  • Puree the avocado, garlic, onion, pepper, lemon juice and parsley in a blender, along with 1 cup of vegetable broth.
  • Add the remaining broth and season with salt, pepper and cayenne pepper. Puree until smooth.
  • Cool the avocado cream soup for at least 1 hour.
  • Divide into bowls and garnish with cherry tomatoes and fresh parsley leaves.
  • Serve the soup with toast and sour cream.
