Necessary products:

8 medium carrots

1 tbsp olive oil

1 tsp honey

50 grams of butter

1 large onion

1 l. water or broth

1 tbsp apple cider vinegar

salt to taste

mix of spices wrapped in a piece of gauze (10 grains of black pepper, 2 chopped garlic cloves, 1 star anise, 2 cloves, 1 tsp whole coriander), chopped parsley, yogurt, rusks - for decoration

Method of preparation:

Cut the carrots into small cubes, put them in a bowl, add olive oil, honey, 1/2 tsp salt and stir. Put them in an oven preheated to 220 degrees and bake until they start to turn red (about 25-30 minutes). Baked carrots give the soup a more interesting and dense taste.

Cut the onion into semicircles and fry it in the melted butter for about 4-5 minutes, stirring. Add the roasted carrots, spices and pour the water (or broth). Bring to a boil, reduce heat and cook for about 30 minutes, until carrots are tender. Remove the "bag" of spices from the pan and mash the soup. Season with salt and vinegar, stir. Let it cool to room temperature and then store it in the refrigerator. When completely cooled, decorate as desired and serve!
