Required products :

  • 2 tablespoons coconut oil
  • 1 onion, finely chopped
  • 2 cm ginger root, grated
  • 1/4 teaspoon turmeric
  • 1 teaspoon salt
  • grains of 6 cobs of corn
  • 1 potato, cut in bulk
  • 400 grams of coconut milk (canned)
  • 2 thin slices of lemon peel
  • 1/2 cup coconut chips
  • 2 tablespoons lime juice
  • avocado and coriander to serve

Method of preparation :

Put the coconut oil in a saucepan, add the onion, ginger, turmeric and half a teaspoon of salt. Fry for 10 minutes until the onion is soft.

Add the corn, potato slices, coconut milk (before pouring, shake the can vigorously), lemon peel and 1 1/2 teaspoons of water. Boil on low heat for about 20-25 minutes.

Remove the lemon zest and puree the soup, adding salt to taste.

Cool for 2 hours.

Serve the soup with coconut chips, avocado and lime slices.
