How To Cook Cold Roasted Tomato Soup With Mint And Cheese - Recipe

Necessary products:

 

  • 15 ripe tomatoes
  • 50 milliliters of olive oil
  • 3 crushed garlic cloves
  • 1/2 onion, finely chopped
  • 2 tablespoons chopped thyme
  • 200 milliliters of chicken broth
  • 150 grams of diced cheese
  • 10 fresh mint leaves
  • 2 tablespoons melted butter

 

Method of preparation:

 

Peel a squash, grate it and put it in a pan, along with the onion, thyme and olive oil. Season them with salt, pepper and bake in a preheated oven at 190 degrees for 40 minutes.

Cool the mixture, pour it into a blender, pour the broth, butter, put the mint leaves and puree until homogeneous. Sprinkle portions, garnish with cheese, mint leaf or basil and serve.
