How To Cook Cold Soup With Beets, Radishes And Cucumbers - Recipe

Ingredients: 

 

  • 800 grams of yogurt
  • 250 grams of red beets
  • 200 grams of cucumbers
  • 3-4 cloves of garlic
  • 50-100 grams of radishes and salt to taste
  • 1-2 boiled eggs
  • 3-4 tablespoons olive oil and juice of one lemon and fresh dill



Preparation:

Boil the beets in a saucepan, drain and blend until homogeneous. Beat the yogurt with water, season with salt, chopped garlic cloves, lemon juice, olive oil, and chopped dill. Combine the two mixtures and add finely grated radishes and cucumbers. Stir the soup until smooth and cool. Serve cold, garnished with chopped fresh dill and eggs.
