How To Cook Colorful Beans In A Casserole With Bacon And Garlic - Recipe

Required products :

  • 450 grams of colorful beans
  • left cashier
  • 340 grams of diced bacon
  • 1 onion, finely chopped
  • 1 jalapeno pepper, finely chopped
  • 3 cloves garlic, crushed or finely grated
  • 400 grams of canned tomatoes, mashed
  • 6 tea cups homemade chicken broth
  • 2 bay leaves
  • a large handful of fresh parsley, finely chopped

Method of preparation :

  • Put the beans in a large bowl and fill it with enough water to cover it by 5-6 centimeters.
  • Add 2 tablespoons of kosher salt, stir and let it soak for at least 8 hours, preferably overnight. Rinse and drain.
  • Bake the bacon in a large saucepan over medium heat until the fat melts and begins to brown slightly.
  • Add onion and hot pepper and saute for about 4 minutes.
  • Add the garlic and cook for another 30 seconds, stirring constantly.
  • Pour in the mashed tomatoes and simmer for about 3 minutes until slightly thickened.
  • Add the beans, chicken broth, bay leaves and 2 tablespoons kosher salt. Stir and bring to a boil.
  • Preheat the oven to 220 degrees and transfer the beans to a saucepan.
  • Put the lid on and cook for 1 hour or until the beans are completely cooked.
  • Open the casserole and roast the beans to taste.
  • Remove the bay leaves and discard them.
  • Season with salt, if necessary, sprinkle with fresh parsley and serve.
