This Ayurvedic recipe for making lentils is given to us by Nora Vrabcheva , who teaches yoga and is a follower of Indian cuisine. For her, everything the earth gives us is good food. And here is what, according to the ancient science of life, Ayurveda, Nora recommends to all of us:

"Eat with pleasure and love in a pleasant calm atmosphere, do not talk much, and do not stay long at the table, it slows down digestion. The food that comes to you in one way or another is good, let it charge you."

You need 1.5 cups of lentils of different types, red, yellow, brown. The fact that they have different cooking times does not bother you. Soak for about 30 minutes while you prepare the other products and wash it well before adding to the dish.

  • 2 tbsp. Ghee or a lump of butter, or 0.5 cups of sunflower oil or charlan.

Heat and add:

  • 1 tsp turmeric
  • 0.5 tsp black pepper ground or crushed together with the following
  • 0.5 tsp coriander seeds
  • 0.5 tsp fenugreek seeds or cumin
  • 1 cm grated or finely chopped ginger root fry for 1 minute and add
  • 1 fresh hot pepper
  • 5 cloves garlic finely
  • 1 onion finely chopped
  • After 3-4 minutes of stewing add
  • 2 carrots cut into cubes
  • 3 diced potatoes

Stew for another 5 minutes, stirring once or twice. Add the lentils and 3 cups of hot water (maybe more, depending on how you like the density). Boil for 15 minutes and add:

  • 1 green zucchini cut into cubes
  • 1 tomato, peeled, diced
  • 1 tbsp. salt or to taste

Stir, stop the heat and let it cook with the lid closed for another 10 minutes.

A bunch of finely chopped parsley when serving.
