Use seasonal vegetables to make this colorful salad. In just 30 minutes you will make four healthy lunches for work or school.

You can use bulgur, which is prepared quickly and is high in fiber. An option is to replace it with quinoa, brown rice or something else.
Optionally, you can add chicken, shrimp or tofu for extra protein.

Required products :

for the salad:

  • 4 cups grated cabbage
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons fresh basil, chopped
  • 2 cups boiled bulgur
  • 1 red pepper, chopped
  • 4 medium-sized carrots, chopped
  • 1 yellow pepper, chopped
  • 1 medium cucumber, sliced
  • 1 cup chopped red beets
  • 2 tablespoons sesame seeds

for peanut sauce:

  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1 tablespoon rice vinegar (or other)
  • 1 tablespoon honey
  • 1 clove garlic, chopped

Method of preparation :

Mix the cabbage, mint and basil in a large bowl. Divide the vegetables into four boxes evenly, close with a lid and place in the refrigerator.

Distribute in four large boxes 1/2 cup boiled bulgur, red pepper, carrot, yellow pepper, cucumber, beetroot and sesame seeds.

Beat the peanut butter, soy sauce, water, vinegar, honey and garlic in a small bowl. Divide the peanut sauce into four small boxes evenly, close with a lid and refrigerate.

Closed salad boxes can be stored in the refrigerator for up to 4 days. Just before serving, season with peanut sauce.

Put 1 cup of bulgur and 1 and 1/2 cups of water in a small saucepan to boil, then reduce the heat to low, cover and simmer until the bulgur softens and absorbs the liquid. It takes about 10-15 minutes to prepare the bulgur.
