Required products :
- 2 teaspoons flour
- 3 tablespoons brown sugar
- 1 tablespoon baking powder
- a pinch of baking soda
- 3/4 teaspoon salt
- 1/4 teaspoon cinnamon
- a pinch of allspice
- 5 tablespoons cold butter + melted for spreading
- 1 cup sweet mashed potatoes
- 1/3 cup buttermilk
Method of preparation :
Line a large baking tray with parchment paper or place a silicone pad in it.
Mix the flour, sugar, baking powder, baking soda, salt and spices.
Add the cubes of cold butter and rub into the flour to obtain crumbs.
In another bowl, mix the buttermilk and mashed potatoes. Combine the two mixtures and knead the dough.
Roll it to a thickness of 1 cm and cut biscuits into the desired shape - round or square.
Arrange them in the pan and grease them with a little melted butter.
Bake for 12-14 minutes, until the cookies are slightly browned.
Transfer the biscuits to a wire rack or line the kitchen counter with paper and arrange to cool. If you have leftover dough, bake another batch.
